Tuna Couscous Bowl

Here’s a quick & easy lunch or dinner idea! Perfect for these warmer summer days. This bowl is packed with colourful veggies and as easy to make as it is delicious.



Ingredients:


  • Couscous

  • Tuna

  • Chickpeas

  • Cucumber

  • Peppers

  • Red onion

  • Gherkin

  • Cottage cheese

  • Hummus

  • Lemon juice


Method:


  1. Cook couscous according to instructions on packet.

  2. Season chickpeas (I used cumin, paprika, cinnamon, salt and olive oil) and roast in air fryer (or oven) until crispy.

  3. Dice vegetables.

  4. Serve couscous in a bowl and top with tuna, chickpeas, diced veggies, hummus & cottage cheese.

  5. Season with salt, pepper and lemon juice.

  6. Enjoy!
