Red Lentil Hummus

This red lentil hummus recipe has to be my favourite from my festive season guide. Not only is it super quick, easy and affordable to make but it also has so many health benefits! Lentils are rich in  protein, fiber, iron and folate, making them great for digestion, energy, and overall health. Their high fiber content helps manage blood sugar levels.

Ingredients:


  • 1 cup split red lentils, dry

  • 2 cups water

  • 2 tbsp lemon juice

  • 2 tbsp peanut butter

  • 1 tsp garlic, crushed

  • 1 tsp salt


Method:


  1. Place lentils in a sieve and rinse well.

  2. In a small pot, bring water to a boil then add lentils and reduce heat. Allow to simmer for 10 minutes.

  3. Drain and rinse the lentils with cold water (lentils should be soft and almost like a paste).

  4. Place lentils in a blender and blend until smooth. 

  5. Add the lemon juice, peanut butter, garlic and salt. Blend again. Add 2-3 tbsp water until you’ve reached desired consistency.  

  6. Serve with a sprinkle of paprika and cumin.
