Delicious Banana Muffins

Looking for a sweet but healthy snack? I’ve got you covered with these delicious AND nutritious banana muffins! I used wholewheat flour to increase the fiber content and added sunflower seeds for additional healthy fats and fiber.



INGREDIENTS:

(makes 12 muffins)


  • 1 2/3 cups wholewheat flour

  • 5 large ripe bananas

  • 1.5 tsp baking powder

  • 1/2 tsp cinnamon

  • 1 tsp vanilla essence

  • 2 eggs

  • 1/2 cup honey

  • 5 tbsp sunflower seeds


MEHOD:


  1. Preheat oven to 190 degrees Celsius.

  2. Grease muffin tray using spray & cook.

  3. In a large mixing bowl, combine the dry ingredients (flour, baking powder, cinnamon, sunflower seeds).

  4. Slice 1 banana and set aside to use as topping later.

  5. Add remaining ingredients into a blender and blend for a few minutes until light & fluffy.

  6. Add the wet mixture to the dry mix and fold to combine.

  7. Pour the mixture into muffin tray and top with sliced banana.

  8. Bake in oven for 15-20 minutes or until cooked through.
