Delicious Banana Muffins

Looking for a sweet but healthy snack? I’ve got you covered with these delicious AND nutritious banana muffins! I used wholewheat flour to increase the fiber content and added sunflower seeds for additional healthy fats and fiber.

INGREDIENTS:
(makes 12 muffins)
1 2/3 cups wholewheat flour
5 large ripe bananas
1.5 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla essence
2 eggs
1/2 cup honey
5 tbsp sunflower seeds
MEHOD:
Preheat oven to 190 degrees Celsius.
Grease muffin tray using spray & cook.
In a large mixing bowl, combine the dry ingredients (flour, baking powder, cinnamon, sunflower seeds).
Slice 1 banana and set aside to use as topping later.
Add remaining ingredients into a blender and blend for a few minutes until light & fluffy.
Add the wet mixture to the dry mix and fold to combine.
Pour the mixture into muffin tray and top with sliced banana.
Bake in oven for 15-20 minutes or until cooked through.
