Asian Lettuce Cups

If you’re a fan of asian cuisine, you have to try the lettuce cups. They make a perfectly balanced lunch or dinner and require minimal time in the kitchen.


I used brown for the benefits of its fiber content. I also used lean beef mince as it contains less saturated fat than normal mince and we know that we want to reduce the amount of saturated fat in our diet to lower our risk of heart disease.


These cups are super easy to throw together. You can enjoy multiple and save any leftovers for lunch the next day.



Ingredients:

(+/- 2 servings)


80g rice

300g lean beef mince

1/2 onion, diced

8 lettuce leaves

1/2 tbsp olive oil

1/2 tbsp sesame oil

1/2 tbsp garlic, crushed

2 tsp ginger, crushed

1 tsp white vinegar

2 tbsp soy sauce


Method:


  1. Cook rice according to instructions on packet.

  2. In the meantime, rinse lettuce leaves and pat dry, being careful not to tear them. Set aside.

  3. Heat olive oil in a large pan over medium-high heat. Cook mince until browned and crumbly (about 5-7 minutes). Drain and discard grease. Transfer mince to a bowl.

  4. In the same pan, heat the sesame oil. Fry onion until soft. Stir soy sauce, garlic, vinegar, and ginger into the onion. Add the cooked mince and rice. Mix well.

  5. Arrange lettuce leaves onto a plate and fill with the cooked mince and rice mixture. Season with salt & pepper according to taste.

  6. Enjoy!
